Good for you: Eggs!

Eggs are simply brilliant student food! It's quick and easy to make something good with eggs, they're packed with nutrition, fairly cheap and they'll keep you full for a long time.

Eggs - a source of protein of eggstremely high quality

Protein is nutrition for the muscles, and if there's one food that's packed with high-quality animal protein, it's eggs!

Eat a delicious omelette, either before or after training, and you'll know you've got all the essential amino acids you need from food. The only thing the egg lacks is vitamin C, so top it with a few slices of tomato or rings of paprika and you've got the full package!

And hey, luckily it's just a myth that raw eggs are healthier than cooked eggs. Phew!

Five eggstremely good reasons to love eggs:

  1. Eggs are brain food:
    The egg yolk contains iodine, which contributes to our normal cognitive function - i.e. the way we process information, remember and learn.

  2. Eggs are muscle food:
    Proteins are nourishment for the muscles, and eggs are rich in protein. Protein-rich foods enable us to maintain and build new muscle mass.

  3. Eggs are cheap:
    Eggs have a reasonable price in relation to all the benefits it brings - you get great value for your money.

  4. Eggs are a vitamin bomb:
    It contains vitamins A, D, E and K, in addition to several of the B vitamins.

  5. Eggs can be used for everything:
    Boiled egg, fried egg, poached egg, omelette, scrambled egg, egg for breakfast, lunch, dinner, evening meal, as a snack, in baking, desserts or drinks. The egg is perhaps our smartest raw material and can be used in countless combinations.

Omelettes are easy to make and easy to enjoy

Omelettes are perfect for lunch, and you can make them the night before to keep your packed lunch ready for the next day. What's more, omelettes are a great way to use up leftover vegetables, cheese or cold cuts that you have in the fridge. The variations are endless!

You can fill the omelette with WHATEVER you like! Mushrooms and onions are a classic, and a little bacon makes it even tastier.

Basic recipe for omelette (one portion):

  • 2 eggs

  • 2 tablespoons water

  • 1/4 tsp salt and preferably a little pepper

  • A little butter or liquid margarine for frying

Suggestions for omelette topping

  • Ham, cheese and paprika.

  • Bacon, onions and mushrooms.

  • Spinach, chives and cured ham.

  • Leftover boiled and sliced potatoes, spring onions and tomatoes.

The possibilities for variation are endless, use leftovers from the fridge and your imagination!

How to make it:

  1. Whisk together the eggs, water, salt and pepper in a bowl. It's okay to foam a little, as this will make the omelette fluffy and delicious.

  2. Heat the frying pan, add the butter/margarine and pour the egg mixture into the pan. Turn the heat down slightly and pull the batter towards the center when it starts to set.

  3. When the omelette is almost set, you can choose to add a topping (leave the topping for a minute or two before folding the omelette), or simply fold it in half and cook for another minute.

Serve with wholemeal bread and a fresh salad. Enjoy!
