This is so fun and delicious! With this basic recipe, you can play around with your favourite ingredients and impress your friends and family home made ice cream!
Ingredients for about ten servings or maybe four if you love ice cream 🍨
7 egg yolks (be careful when separating the eggs, and save the egg whites)
7 tablespoons sugar
7 dl whipped cream
1 vanilla pod or real vanilla sugar - split lengthwise and scrape out the seeds
In total, it takes about five hours to make and freeze the ice cream.
Make the egg mixture: Place the egg yolks, sugar, vanilla pod and seeds in a glass or steel bowl and stir together.
Gently heat the egg mixture over a water bath (place the bowl with the egg mixture over a pot of hot water) while whisking until the sugar has dissolved. Use a balloon whisk.
Remove the egg mixture from the water bath when the sugar is almost dissolved, whip the eggnog cold, thick and light with an electric hand mixer or finish whipping it in a food processor with a whisk.
Whip the whipped cream semi-stiff, i.e. not quite stiff, but the number before. It should be slightly liquid so that it is easier to mix. Leave it on the counter until it is at about the same temperature as the eggnog before mixing them together.
Then gently mix the cream into the egg mixture to form a cohesive mass.
NOW you can add berries, chopped caramelised or natural nuts, caramelised popcorn, your favourite chopped biscuits, non-stop or similar. But you can also wait until step 8.
Pour the batter into a clean loaf tin, cake tin or similar. Now it's basically ready for the freezer if you don't want to top it. In that case, cover it with foil, a bread bag, wax paper or similar and freeze for about four hours.
Add stirred berries, caramel sauce, chocolate sauce and make patterns that will create cool ice cream balls or games in the ice cream before putting it in the freezer.
Make ice scoops, cut it into slices or roll it out on a platter. You can serve it as it is or top it with whatever you like, for example:
🍓Fresh berries, berry sauce, pickled rhubarb or other fruit.
🥜Chopped caramelised, salted peanuts or natural nuts.
🍪Non stop, biscuits, salted caramel sauce, chopped chocolate or chocolate sauce.
🌼Edible flowers, meringue or your favourite combo.
The only limit is your imagination!
For example, egg whites can be transformed into homemade meringues that can be sprinkled on the ice cream, used as cake decorations, on desserts, on strawberries or eaten as they are, but they must be without yolk, so be careful when separating the eggs.
Egg whites can also be frozen and used later in omelettes or pies.
